As a child my most prized possession was an "easy bake" toy oven. I inflicted shallow, rock hard sugar infused discs -well a light bulb can only do so much... it's not a proper oven you know!- to my family who graciously chomped on them out of love to encourage me to keep on baking!
Even though life and adulthood took me into other avenues baking has always remained quietly fermenting in the background from baking birthday cakes for family and friends to selling my baked goods in craft markets. And as a long term vegetarian I've now taken the decision to go a step further, veganism. I realised that I wouldn't have to forego anything and that baking a cruelty free cake was possible. Just because you stop consuming animal produce doesn't mean that you have to give up tasty, beautifully fluffy, moist and sweet cake!
